After a lone star bite, watch for delayed allergic reactions to red meat (beef, pork, lamb) for at least 6 months.

Symptoms appear 3-6 hours after eating — hives, swelling, GI distress, or anaphylaxis — not immediately like a typical food allergy.

Dairy and gelatin can also trigger reactions in some patients.

Keep a food-and-symptom diary if you feel anything off after meat-containing meals.

Suspected reactions warrant an allergist visit and an alpha-gal IgE blood test.

While testing is pending, avoid red meat and carry an epinephrine auto-injector if reactions have been severe.
